Try out this delicious protein filled recipe. Great for lunches and dinners this week. Just pair with your favorite healthy starch and you have a full meal 🍽️.
CURRIED TOFU SALAD
Serves 4
INGREDIENTS
7 oz. (200g) tofu, drained, crumbled
2 celery sticks, chopped
1 small onion, diced
1⁄4 cup (30g) almonds, chopped 1⁄4 cup (30g) raisins
3 tbsp. vegan mayonnaise
1 tsp. curry powder
1 tbsp. dill, chopped
DIRECTIONS
1. Crumble the tofu into a bowl. Add in the rest of the ingredients, season with salt & pepper, and stir well to combine.
2. Store in the fridge for up to 4-5 days.
I don’t personally eat tofu more than once or twice a week, but when I do it’s got to be flavorful! 😋🥗
I love this because of the paired almonds and raisins along with the curry. It gives me Persian dish vibes 😋.

Green Lentil Curry for Tasty Tuesday! I love lent Green Lentil Curry for Tasty Tuesday!
I love lentils and curry so I wanted to share a simple recipe I love making with you today. Give this recipe a try!
Serves 4
INGREDIENTS:
1 cup (190g) dried green lentils 1 tbsp. olive oil
3 cardamom pods
3 cloves
1⁄2 cinnamon stick
1 onion, chopped
2 garlic cloves, crushed
1 tbsp. root ginger, grated
1 red chili, chopped
1 tbsp. cumin seeds
1 tbsp. garam masala
1 tsp. ground coriander
1⁄2 tsp. salt
1⁄2 tsp. black pepper
14 oz. (400g) can diced tomatoes 1⁄2 lime, juiced
1 tbsp. coconut sugar
7 oz. (200g) spinach
7 oz. (200ml) can full-fat coconut milk
DIRECTIONS:
1. Add the lentils to a pot, cover with water, place over a medium heat and cook for approximately 30 minutes, or until the lentils are tender. Drain and set aside.
2. Heat the olive oil in a large pot and add the cardamom pods, cloves and cinnamon stick. Sauté for a minute, then add the onion, garlic, ginger, and chili, cooking for a further 2 minutes.
3. Add the cumin seeds, garam masala, coriander, salt, pepper, tomatoes, lime juice and sugar and cook for a further 5 minutes.
4. In the meantime, place the spinach in a food processor and pulse, until finely chopped.
5. Once the lentils have cooked, stir them into the tomato curry mixture. Add the spinach and coconut milk, and stir well. Cook over medium-low heat, stirring occasionally, for about 5 minutes.
6. Taste the curry and, if necessary, adjust the seasoning with a little extra salt, pepper and lime juice. Remove the cardamom pods, cloves and cinnamon stick before serving.
